Before you start, if you're going to use dry beans and not precooked beans from a tin, you'll need to boil them the previous day for a couple of hours. The best way to tell if they're ready is to prick them from time to time until they feel soft. The same goes with the tripe, as sometimes when you buy it precooked it's not as it should be.

Once the tripe and the beans are both soft, it's time to start cooking the meat and removing the fat.

While you wait for the meat to degrease, you can wash the vegetables and cut them into thin pieces with a knife.

Add the cuts of meat bit by bit, as shown in the picture. Then you can add salt to taste. Add the chorizo last.

Once you've added all the meat, pour a glass of red wine over the top, as this will help to remove the fat. When the meat is nearly ready, it will begin to look like this.
