How to Make Tuna Stuffed Aubergine

There are countless recipes for stuffed aubergine as we can prepare the filling with a myriad of ingredients. One of the classics is aubergine stuffed with minced meat, but we can also prepare this version with canned tuna and the result is delicious. The first thing you must do to make tuna stuffed aubergine is to wash the aubergines and split them in half from top to bottom.

Then, salt the aubergine halves to sweat them and have them release water; set them aside them for later.

On the other hand, to begin the aubergine stuffing, you should chop the onion as you prefer and add salt.

The next step in your tuna stuffed aubergine preparation will be to pour a drop of oil in a pan and when hot, add the onion to sauté it.

Take the aubergine, dry them with absorbent kitchen paper and empty them with care so to not damage the shell; for this, you can cut them up and down and side to side making squares and then remove the interior with the help of the same knife or spoon. Leave enough flesh on the aubergine so that it does not fall apart in the oven (see picture).

You must then cut into small pieces the aubergine flesh, add salt and pepper to taste and add it to the pan with the onion to sauté.

Then drain the tuna tins and add them to the sauté mix. It is optional but you can also add tomato sauce to add colour to the aubergine and make it tastier.

If the tinned tuna is with olive oil you can choose to not dispose of the oil.

Although this step can be skipped, we recommend that before filling you place the empty aubergine shells in a preheated oven at 180 ° C. Only a few minutes will be enough

Once all ingredients in the pan are well sautéed you should start placing this stuffing into the skin of the empty aubergines.

Once you have got all aubergines stuffed with tuna, sprinkle grated or powdered cheese on them and add a little butter to become golden.

Put the aubergine in an oven with the grill on and leave them about 15 minutes or until you see they are golden.
