The first step to making this vanilla and chocolate crème caramel is to prepare the vanilla and chocolate mixture. Put the milk and the vanilla essence in a pan and bring it to a soft boil on the hob, stirring all the time.

Once the mixture begins to boil, remove from the heat and put it aside. Cut up the chocolate into small pieces with a knife and melt it using a bain-marie. You can even put it in the microwave if you prefer. Once the chocolate has acquired a runny consistency, add it to the pan of milk and vanilla essence. Put the pan back on low heat for 5 minutes while stirring with a spoon until the mixture is well combined and contains no lumps.

Get a deep bowl and beat the eggs in it using a manual or electric whisk. Next, add in the sugar, the chocolate and vanilla milk and continue beating until you achieve a uniform mixture. If you want the crème caramel to have a more intense aroma and flavour, you can add a little more vanilla extract.

Put the vanilla and chocolate crème caramel mixture to one side while you make the liquid caramel. To do this, you just need to mix 4 tablespoons of sugar with a little bit of water in a pan, put it on the heat and stir the mixture until it takes on the colour and texture of liquid caramel. When it is ready, spread the caramel evenly over the bottom and sides of the ramekins or moulds that you're using for your crème caramels.

Now, simply pour the crème caramel mixture into the moulds and put them in the oven. Bake them at 190ºC (370ºF) using the bain-marie (water bath) method for at least 1 hour. After this time, test them with a toothpick to see if the crème caramel is ready. You'll know it's ready if the toothpick comes out of the crème caramel completely clean.

Lastly, leave the vanilla and chocolate crème caramel to cool in the fridge and, voilà, it will be ready to serve and enjoy!
