When we go to Japanese restaurants and see the selection of sushi dishes available, we tend to think that they are complicated to make. The truth is that some of those sushi dishes are hard to make and only a true chef would be able to prepare them. However, prawn sushi can be prepared without much difficulty and taste delicious. It is a simple dish without any complex techniques, making it perfect for novice cooks. Steps to follow to make this recipe:

Rinse prawns under cold water, but don't peel them yet. Dry them and insert a metal skewer lengthwise. Next, put 200ml of water in a saucepan and add the salt. Turn the fire on and when the water boils, cook the prawns inside for 4 minutes. After, remove the prawns from the pan, rinse them and take them out from the skewers. Don't throw the water away, as you'll be using it later. This water has the juices from the prawns and it will be used later to marinate the prawns without the peel.


Peel the prawns and leave the tail. Cut them down the middle lengthwise. This way you'll be able to remove the intestinal tract.


Combine rice vinegar with 4 tablespoons of the water used to cook the prawns, mirin, sugar, lemon and a pinch of salt. Marinate the prawns in this mixture 10 minutes and let them drain.


Finally, with wet hands, form oval shapes with the sushi rice, making 8 portions. With a prawn in one hand, spread a little wasabi on top and place it over a portion of rice. Don't overdo the wasabi or it will be impossible to eat. You can also choose not to put wasabi on top of the prawns and leave it to one side when you bring the sushi to the table. This way everyone will use the wasabi they want, and your prawn nagiri won't be too spicy.

Press down the prawns with your thumb until the nigiri is totally compact.


Bring it to the table alongside with a small plate with some wasabi and another with soy sauce.
