Start your no-bake apple upside down cake by arranging your ingredients. We are using cooking apples, but you could use regular apples if you don't have any available. You will need a round frying pan, preferably a skillet with a heavy base.

Peel the apples and slice them into crescent shapes like the picture below.

Melt the butter in the frying pan on a low heat. Sauté the apples gently for about 4 minutes until soft before adding half of the sugar (1 half cup). Let the sugar melt and coat the apple slices.

Add the sugar and cinnamon and stir well. When the apples are nicely soft, remove from the heat.

To prepare the cake, start by separating the eggs.

Divide the remaining sugar between the whites and the yolks (should give a quarter cup each) and beat them both. The whites will be ready when you have stiff peaks like a meringue.

Gently mix the egg whites and yolks. Once fully integrated, sift in the flour and carefully fold this in also. The idea is to keep as much air in the egg whites as possible so that you end up with a nice fluffy cake.

Make sure the apple slices are well covered over the base of the pan. You can try to arrange them into a nice pattern if you wish. Pour over the cake batter and cover with a lid. Continue to cook on the stove set to a very low heat for about 20 minutes. After this time, check the consistency of the cake by spearing it with a knife and seeing if any batter can be seen on the blade.

Lay a plate on top of the pan and carefully flip over so that the apple slices can be seen on top. Cut into slices (makes about 6) and enjoy this delicious no-bake apple upside down cake with some brandy cream or homemade ice cream.
