First, note that in order to make any stuffed chicken recipe, you will need the chicken to be gutted and cleaned so that you stuff it with your chosen ingredients inside.
The best thing is to ask your butcher to do it for you, but you can also do it yourself at home with the help of a sharp knife. It will be important to keep the chicken whole and not cut it into pieces, otherwise you will not be able to stuff it.
To start preparing the Christmas chicken stuffing, you have to mix all of your minced meat in a bowl: chicken with pork, pork with beef, pork and bacon... Anything can go!
Make sure to use fresh, high-quality meat for the best flavor. Additionally, consider adding a bit of sausage to the mix for an extra burst of taste. Sausage can introduce a new layer of seasoning, enhancing the overall stuffing.
Add the bread soaked in milk and mix with the meat to form a smooth paste. Then season the meat mixture and add the minced garlic to bring more flavour. If you like, you can also add chopped parsley, although it is optional.
Incorporating fresh herbs such as thyme or sage can also elevate the flavor profile of your stuffing. These herbs have a wonderful aroma that pairs perfectly with poultry.
Next, add the dried fruits to the mixture that in our case are: prunes, pine nuts and dried peaches; however, you can choose whichever dry fruit you like best, as they all go well with Christmas chicken stuffing. Keep mixing it well so that they are well spread through the filling.
In addition to dried fruits, you might consider adding some chopped nuts like walnuts or almonds. These add a delightful crunch and further enrich the texture of the stuffing.
The next step is peeling the apple and dicing it so you can also add it to the other ingredients in the filling. Finally, pour in a glass of white wine or your favourite liqueur, such as cognac or brandy. The result should be a consistent and homogeneous mixture.
Remember, the choice of liqueur can significantly influence the aroma and taste of the stuffing. For example, using a fruity liqueur like Calvados can complement the apples beautifully.
Then, you can season the inside of the chicken and start filling it through the opening that you have used to empty it. You will need to push the filling in for it to fill the whole inside. When closing up the chicken, there are various methods: tying the legs with twine, sewing the chicken, placing it in a mesh or net... Choose the one you prefer, but make sure that the filling won't come out.
It's important to ensure that the stuffing is packed tightly, but not overly so, to allow for even cooking. Additionally, you can rub some seasoning on the outer skin of the chicken for added flavor.
Put the chicken on a baking tray and add a little oil on top, and you can also sprinkle some herbs on, like rosemary. Regarding the accompaniment for stuffed Christmas chicken, you can opt for baked potatoes, baked apples or whatever you like.
Consider adding a splash of chicken broth to the baking tray to keep the chicken moist during cooking. This also creates a delicious base for the gravy.
With the oven preheated to 180ºC, put the tray with the stuffed chicken in the oven and after 10 minutes, lower the temperature to 150°C. To make sure the dish will not be dry, you can baste the chicken as it cooks, with a little bit of the wine or liqueur you used. You will need to bake the chicken for at least 45-60 minutes, checking if it is well browned and cooked.
