Tenderloin is a very tender cut of meat that does not need much preparation time and which can be enjoyed in a myriad of different and delicious ways. If you are a meat lover and want to enjoy its flavour to the max, read on! The first step in this pork tenderloin recipe is to clean the pork and to remove the fat. Next, cut into suitable pieces to serve up to your guests. Season with the salt and black pepper, which will intensify the flavour of the meat as it is cooked. Don't worry too much if you haven't seasoned the meat enough as you can always add more later on.

Put the meat to one side and prepare the potatoes you'll serve up alongside it. Wash, peel and cut the potatoes into slices of half a centimetre thick. Make sure they are not too thick to avoid serving up any potatoes that are still raw inside. Drizzle some olive oil in an ovenproof dish and create a bed of mashed potatoes by layering the slices on top of each other so that the bottom is covered completely.

Then peel and cut the onion into long thin slices, peel and chop the garlic cloves and put in a bowl. Add a splash of olive oil, white wine and finely chopped parsley. This mixture will make the perfect condiment to flavour your tenderloin and potatoes, keeping the dish nice and juicy. Put to one side for later.

The next step is optional, only do so if you like your steak with a an extra crunch. Put a frying pan on the heat, add a glug of olive oil and wait for it to warm up. Pop in the tenderloin cuts and brown them on each side. It is very important that you do not overdo this and leave it in for too long. The aim of this step is to seal the steak, not to cook it through. As noted above, you can skip this step if you don't fancy it or are short of time.

When the tenderloin is browned on each side, place it in the dish on top of the bed of potatoes and pour over the onion, garlic, olive oil, white wine mixture that you prepared earlier. Cover evenly so that all the cuts of meat are equally succulent. If you want to add a little black pepper or salt, now is the time to do so.

Finally, pop the dish in the middle of the oven and cook the tenderloin at a temperature of 180 degrees Celsius (300F), with heat from above and below. About 15 or 20 minutes of cooking will be enough. After this, check to see if the pork and potato dish is ready to eat. Before serving up, we suggest taking advantage of all the delicious juice at the bottom of the dish by pouring it on top again. Bon appetite!
