Baked is not always the way you're going to go with pork chops. They are a thinner cut of pork, although this depends on the thickness of the cut/generosity of your butcher. Because of this, they can often be fried quickly in a pan and still be very delicious. However, this baked boneless pork chops recipe has its own benefits. As you cook it more slowly, the already tender meat will be even more tender and infused with flavor. This is often the benefit with slow cooking. Many people will also claim that leaving them on the bone will impart more flavor. While this may be true to a very small extent, it won't really affect the flavor in this instance much. For most, it won't be enough for the hassle of eating your pork chops bone on.

To start your baked boneless pork chops recipe, make sure you have good quality pork chops. If buying from the butcher, ask them to remove the bone for you. If not, then you will need a very sharp knife. Cut around the bone and fat. There will be little bits of meat between the fat and the main part of the fat, but without a sharp knife these will be hard to remove.

There are three main ways to prepare the pork chops before the oven. The first is to simply season it with salt and pepper and give it a rub with olive oil. This seasoning will absorb into the meat while cooking. The next is to brine it. This involves adding 3 tbsp salt to 3 cup of water and mixing until dissolved. Place the pork chops in the brine for up to 4 hours before cooking. Season with the pepper and oil, but you will not need any more salt. The last is to leave them in a marinade. This will depend on the style you want to eat them. You could have a Spanish salsa verde or even add a tangy citrus touch.

Once you have your boneless pork chops prepared how you want them, preheat the oven to 350 ºF/180 ºC. Place them in a baking tray so they are all flat and not on top of each other. They will need some moisture, so if they don't have oil or marinade then provide some now. You could even put a little dish of water in the oven below the chops to make sure the humidity is right.

Bake for 8 - 12 minutes and remove your baked boneless pork chops from the oven. Let sit for at least 5 minutes before serving to let the juices settle and enjoy with your favorite accompaniment. These ones were done with some honey roast carrots, a little rosemary and some sun dried tomatoes.
