Nothing is more appealing than a tasty asparagus soup for dinner. It is a dish that is very easy to cook and that allows us to improvise easily with what we have in our cupboard. If you have a bundle of asparagus that you have had for a few days already and don't know what to do with them, you can turn them into a soup or cream of asparagus. Steps to follow:

First cut the onion into pieces and sauté in a pan.


Next break off the asparagus ends, which are normally the at the bottom, and use the thinner ends which are more tender. Also, cut up the asparagus, and add in the onions that you sautéed earlier.


Then chop the potatoes and add to the pan with the onion and asparagus.


Once you have all the ingredients in together, mix, cover with water, season and simmer for about 20 minutes.


Then, after simmering the whole mixture, grind with an electric blender and strain. It is best to use a very fine sieve, as this works better and gets rid of any lumps.


Finally, add the cream to make the soup creamier and enjoy!
