How to Prepare Courgette Cream Soup
Courgette or zucchini is a very healthy food perfect for diets because, like most vegetables, it does not contain any fat. There are many ways of cooking it: in omelettes, stuffed or with curry among others. If you like courgette, you should know that it makes a delicious puree, especially with some added cheese. For this reason, at Onehowto we'll explain how to prepare courgette or zucchini cream soup.
To start preparing this delicious courgette soup, cut the back and fron tips of the courgettes. You can peel them if you want, however we recommend you don't do it. The peel usually is quite soft and it contains more vitamins and fiber. However, it depends on the courgettes you have. If you think the skin is too hard, then it's better if you peel it, so the puree will be softer.
Cut the courgettes into squares or slices so it's easier to cook and grind later.
Peel the onion and cut it into quarters.
Fill half a pot with water, put it to boil and add the beef stock cube, the sliced courgette and the chopped onion. If you don't want to use the beef stock cube and make a completely vegetarian dish, you can use vegetable broth.
After 20 or 30 minutes, remove from heat and whisk all in a blender or food mill. The thickness of puréed courgette can be adjusted to your taste by removing or leaving the water; you can simply drain some water from the pot used to boil the courgettes.
Once you have found the right thickness, check the salt to taste and add a little pepper.
Add the cheese to the courgette and beat everything again, you can also mix it to make it all a homogeneous purée.
You can add some croutons to the soup, so it will be tastier and the presentation will look nicer.

- If you wish to make a thicker soup you can peel 4 potatoes and boil them along with the courgette and onion.
