This egg can be cooked separately and added to the soup at the end, but a great option is to poach the egg in the soup at the end of cooking. Gather all the ingredients to make this Italian onion soup with recipe on a table or kitchen counter. This way, you can check if you have all of them or need to go buy some before starting to prepare the soup.

If you don't have vegetable broth at home and you don't want to buy it at a supermarket, you can make it homemade. This way you can better control the flavors and richness. To prepare a very basic vegetable broth you only need a peeled carrot, leek and celery, as well as herbs such as oregano and thyme.

Place all the ingredients in a pot with water and large a pinch of salt and some pepper. Place the pot on a burner, turn it on and wait for the water to boil so that the vegetables begin to cook. Cooking should last at least 1 hour.

In another pot, add a little olive oil. Slice the garlic or crush it finely in a press. Ideally, you will want to julienne the onion into strips which are long and thing. Add a pinch of salt and cook on a very low heat for about 5-10 minutes.

Once you have the homemade vegetable broth ready, strain out the solid pieces of vegetable. Add the vegetable broth to the other pot in which you have sautéed the garlic and onion. At this point, let the onion soup cook for another 20 minutes.

If you do not want to use a homemade stock, you can buy vegetable, beef or chicken stock and use that.

Take about three slices of rustic bread, although this will depend on the size of the loaf. Take the Parmigiano-Reggiano cheese and place it on the bread. You can use other Italian cheeses of a similar hardness. Broil the cheese on the bread until it has melted and then set aside.

As we said before, you can cook the egg separately and simply top off the soup with it. However, we recommend taking a smaller pot and adding one portion of the soup. Ensure this pot has a lid. Bring the soup to a low boil and then crack an egg into the top. Close the lid and poach the egg directly in the soup to your liking. When poached, you will need to scoop the egg temporarily with a slotted spoon and keep to the side.

To serve the soup you will need to act quickly so that the poached egg doesn't get cold, although the heat of the soup will help. Pour the coup into a bowl. Take the cheesy toast and cut it into chunks. Mix these chunks into the Italian onion soup. Then you take the egg and place it on top. If you want to be extra decadent, you can grate more cheese over the top.
