To make the batter for the Malva pudding, mix 2 eggs and 2 cups of sugar in a bowl, and keep beating until its texture becomes creamy and light. If beating by hand is difficult for you, you can even whip it in a food processor, or even use an electric beater. Keep beating until the mixture becomes thick and its color becomes lemony. This step is crucial as the aeration of the batter will impact the fluffiness of the final pudding.

Add 2 tbsp of apricot jam in this mixture of sugar and eggs, and beat properly to mix. This jam adds a delightful fruity undertone that complements the sweetness of the pudding perfectly.

Grease a microwave safe dish of 25x30cm, pour this mixture in it, and bake in the microwave for 60 minutes at 350˚C. Ensure that the dish is deep enough to allow the pudding to rise without spilling over.

Hi there,
This recipe is not really meant for a microwave..it should be baked in a normal oven. I am sure theres a mistake in the baking instructions. The quantity of ingredients and the recipe varied slightly when its bake in a microwave. Lovely recipe though...beautiful in the oven
