Preparing homemade icing sugar is very simple. You just need regular sugar and 3 grams of corn flower. The amount of starch should be very little so as not to end up with powdered sugar. The role of the corn flower is simply to keep the icing sugar in top condition without it hardening over time.
Add into a container the amount of sugar which you need for your recipe and the corn flower. If you do not have a stipulated amount, you can start with 97 grams of powdered sugar, which added to the 3 of corn flower will make 100 grams.
Then blend it all at maximum speed for a few minutes, until you are left with very fine powdered sugar.
You can grind the sugar with any food processor, Thermomix, grinder, coffee grinder, blender, etc. The only thing you should know is that if you grind it with a hand held blender, the sugar will jump out of the container splashing around. So we recommend using a closed, covered blending device.
For optimal results and to get an even thinner icing sugar, sift the sugar with a sieve to get rid of sugar grains that have not been crushed well.
