Steam kamut

One way to cook kamut is to steam it and use it to replace rice. To do that, pre-soak the kamut grains overnight, boil with two or three times the amount of water in a pan, add the kamut to it, and let it simmer for around 45 minutes. You may also steam it with the same amount of water, and let simmer for around 60 minutes. Once the kamut has been steamed, you can use it the same way you use rice.

This golden colored, nutrient rich whole grain makes a great pilaf with vegetables. Preheat your oven to 400˚C (752˚F). In the meantime, put the kamut grains in a sieve, rinse under cold water, transfer to a saucepan, and add water to cover it by 2 inches. Boil it, and let it simmer for 2 hours. Now, drain the water and transfer to a big bowl. In the oven, place squash and cauliflower on baking sheets, drizzle with olive oil, and roast until crisp and golden. Add olive oil in a saucepan, add shallots and onions to it, and season with pepper and salt. Now, add cumin, cayenne pepper, curry powder, mustard seeds, cook for a minute, and then add sherry vinegar.
