MSG, sodium glutamate or monosodium glutamate, is sodium salt of the glutamic acid, an abundantly occurring non-essential amino acid MSG. This version of glutamic acid can be naturally produced in the body, but MSG is processed, and comes from sugar beets after fermentation.
