Flour and eggs are two of the major ingredients in cookie recipes. But if you are allergic to gluten or if you are a vegan, then should you stay away from the blessing of having a cookie altogether? Haystack cookies

Do you remember how your grandma used to make these delicious cookies when you were a child? These are classic favorites, and fortunately, they are made without flour or eggs too. Let’s have a look at the recipe.

Ingredients

  • ¼ cup honey
  • ¼ cup corn syrup (light)
  • ½ cup peanut butter
  • 1 tsp vanilla extract
  • ½ cup lightly toasted sweetened coconut
  • 2 cups corn flakes

Recipe

Take a large pan, add honey, peanut butter and corn syrup to it, and stir well. Bring this mixture to a boil, remove from the heat and add vanilla extract to it. Add toasted coconut and corn flakes to the pan and keep stirring until all the corn flakes get covered with the mixture of peanut butter. Line a baking sheet with aluminum foil, drop teaspoonfuls of the mixture on it, and keep in a refrigerator for around 20 minutes until they become cool and firm. You can store these cookies in an air tight container and keep refrigerated.

Peanut butter cookies

These peanut butter cookies are yummy, fun to make and share as well. They are made utterly delicious by making a center filled with milk chocolate. Kids will surely love them, as well as adults. You should note that these are not suitable for vegans (unless you use vegan condensed milk).

Ingredients

  • 1 can sweetened condensed milk
  • ¾ cup peanut butter
  • 2 cups biscuit mix (packaged)
  • 1 tsp vanilla extract
  • ½ cup sugar
  • Unwrapped pieces of milk chocolate candies as per your requirement (one piece is required for each cookie)

Recipe

Preheat the oven at 375˚C. Take a big mixing bowl, add peanut butter and sweetened condensed milk into it, and stir well until smooth. Add the vanilla extract and biscuit mix to it, and mix well. Make 1 inch balls with this mixture and roll in sugar. Place each ball at a distance of 2 inches on a non-greased baking sheet. Bake for 6-8 minutes until they become light brown around the edges. Make sure that you do not over-bake them. Press a piece of candy in the center of every cookie. Let them cool, store in an air-tight container, and keep at room temperature.

Oat cookies

These are flour-free, egg-free cookies made of oats, flaked coconut and peanut butter.

Ingredients

  • 1 cup of flaked coconut
  • 2 cups oats (rolled)
  • 1 cup of peanut butter
  • 2 cups of white sugar
  • ¼ cup of butter
  • ½ cup of milk
  • ¼ cup of cocoa powder (unsweetened)
  • 1 tsp of vanilla extract

Recipe

Use waxed paper to line some baking sheets. Take oats, peanut butter and coconut flakes in a mixing bowl and mix well until combined thoroughly. Take milk, butter, cocoa powder and sugar in a pan, bring to a boil, and stir until the sugar dissolves and mixture becomes smooth. Remove from the heat and add the oat mixture into it. Add in the vanilla extract too. Take 1 tbsp of the dough in your hands, roll to make a ball, and flatten. Keep each of these flattened balls on the waxed paper and let them cool. Store in an air-tight container and keep at room temperature.
