Cookies for breakfast seems like the diet of an unhealthy person. Although we would all love to eat cookies any time we wanted, we need to limit our intake because of the high sugar and fat content. With our oneHOWTO recipe on how to make sugar free chocolate banana oatmeal cookies, you can see for yourself that eating healthily doesn't always have to be a chore. In fact, it can be absolutely delicious.
The first step in making unsweetened chocolate oatmeal banana cookies is picking ripe bananas. We have to use ripe bananas to get their natural sweetness, so if you can't find any, you will have to wait for your bananas to ripen. This is how we make healthier cookies. Otherwise you will have to add some sugar and they will no longer be sugar free.

Preheat the oven to a temperature of 180 ºC/350 ºF. It is important we use an oven so heat can bake the cookies from all sides.
While the oven is heating up, peel and chop the ripe bananas. Mash the pieces with a fork to obtain a banana porridge.
Along with the banana porridge, add the ground almonds, a pinch of salt and the vanilla to a bowl. Mix all the ingredients and add the rolled oats. Stir everything again until it is well integrated into the sugar free cookie dough we need for our batch of cookies.
The next step in the healthy chocolate banana oatmeal cookie recipe is to add the chocolate chips to the dough. Mix again well so the chocolate is well integrated into the dough, but save some chips for the end. These can be used to decorate the cookies at the end. If you want even healthier banana oatmeal cookies, replace the unsweetened chocolate chips with your favorite nut.
Place a sheet of parchment paper on top of the baking sheet. Divide the dough into different portions, shaping them into a cookie (round, square or rectangular, whichever you prefer) and place each portion on the parchment paper. A neat trick is to use an ice cream scoop to get an even amount of cookie down for each cookie.
Get the chocolate chips you had saved in the previous step and distribute them on each cookie to decorate them. This way they will look even more irresistible.
