How to Make Rice Crispy Cakes
Crispy cakes are a delicious snack perfect for bringing to work or school. Besides being very tasty, its content in rice helps you keep full, which makes it perfect for mid-afternoon cravings. Also, it's extremely easy to do and you won't need to use the oven, so you can do it with your children and introduce them in the world of cooking. Here at OneHowTo we will show you two recipes to learn how to make rice crispy cakes, one with chocolate and the other one without chocolate. Everyone at the office or at school will look at your snack with delight!

Recipe for chocolate rice crispy cakes
Melt the chocolate in a bain-marie. To do so, put boiling water inside a saucepan and leave it simmer. Then, put a heatproof bowl over the pan (without touching the water) and put the chocolate inside. The chocolate will melt with the heat that comes from the water.
Add the butter to the mix and stir well.
When the chocolate is all melted, take it away from the fire and add the rice crispies. If you want the cakes to be more dense, you can add more rice crispies. If, on the contrary, you want it to have less rice grains, don't add that much.
Grease a deep-sided tin with butter.
Put the mixture in the tin and press down to form a thin layer. Again, you can choose the thickness of the layer. If you want the cakes to be thinner, press more. If you want them thicker, don't press too much.
This step is optional, but you can add a layer of white or dark chocolate on top of the rice crispy cakes. To do so, heat a bar of white or dark chocolate in a bain-marie and when it's hot pour it on top of the layer of rice crispy cakes.
Leave it to cool and harden.
When it has cooled down, put it in the fridge and leave it there for one night. When it is completely cool, cut it in squares and it's ready to be served!
Recipe for rice crispy cakes (without chocolate)
If you prefer you can also make rice crispies with golden syrup or honey instead of using chocolate. For this recipe you might have to use more rice cereal because golden syrup doesn't have such a thick texture as chocolate, so it might be a bit harder for the cakes to stick together. Anyway, it is still very easy to prepare:
Put the sugar, the golden syrup and the butter in a pan and bring it to the boil. Don't stop stirring the mixture.
Remove from the heat, add the vanilla essence and the rice crispies.
Grease a square tin. Put the rice cereal into the mixture of syrup and sugar until you have a thick dough.
Cover the tin with the mixture and press until you get the thickness you want for your cakes. Leave it to cool and then put it in the fridge. When it's cold you can cut it into squares and there you have it!
