We not only show you how to make vegan yogurt with coconut milk, but we show you how to make coconut milk in the first place. Heat the water in a pot to a temperature of 60-80 ºC/140-176 ºF. While the water is heating, pour some cold water into a glass and add the agar according to package instructions.
Agar is a vegetable gelatin which is needed to give the yogurt consistency. You can use other types of gelatin, but they will not necessarily be vegan.
To make the coconut To do this, put the grated coconut into the pan of water. Simmer for 10 minutes and then turn the heat off. Leave to soak for a half hour and then add to a blender with the coconut sugar. Blitz until homogenous and you should have your coconut milk.
If you don't want to go to the trouble of making your own coconut milk, you can simply buy a can from the store.
Strain the coconut milk through a fine mesh to remove any solid particles. Some mixers are so powerful that they leave the ingredients completely homogenous, so straining may not even not be necessary. However, we recommend straining it regardless, just to be sure.
Take the glass that you reserved with cold water and dissolve the agar. Add the coconut milk and bring the mixture to a simmer (not a roiling boil). Whisk for at least 5 minutes until fully incorporated.
Once the ingredients are integrated, wait a few minutes and let the milk cool down. This is so it can reach the ideal temperature for the yogurt starter to ferment. Check the packaging of your yogurt starter to know how long this will take.
Next, dissolve the yogurt starter sachet in a cup of vegan milk and add it to the coconut milk. Stir with a non-metallic kitchen utensil and let it rest for the yogurt to ferment. The preparation must rest in the fermenter or yogurt maker at 38-40 ºC/100-104 ºF for 10 hours.
When the yogurt with coconut milk has finished fermenting, store it in the fridge for an additional 8 to 12 hours to achieve acidity and consistency. After this time, remove the yogurt from the fridge and stir until it is creamy. Stir it less if you prefer a more curdled consistency.
Now your vegan coconut milk yogurt is ready! Store the yogurt in sealed jars to preserve them better and keep them in the refrigerator. If you want, you can decorate the yogurt with grated coconut on top by sprinkling a little in each glass before serving.
