While the water is heating, pour some cold water into a glass and add the agar according to package instructions.

Agar is a vegetable gelatin which is needed to give the yogurt consistency. You can use other types of gelatin, but they will not necessarily be vegan.

When the yogurt with coconut milk has finished fermenting, store it in the fridge for an additional 8 to 12 hours to achieve acidity and consistency. After this time, remove the yogurt from the fridge and stir until it is creamy. Stir it less if you prefer a more curdled consistency.
