We not only show you how to make vegan yogurt with coconut milk, but we show you how to make coconut milk in the first place. Heat the water in a pot to a temperature of 60-80 ºC/140-176 ºF. While the water is heating, pour some cold water into a glass and add the agar according to package instructions.

Agar is a vegetable gelatin which is needed to give the yogurt consistency. You can use other types of gelatin, but they will not necessarily be vegan.

Once the ingredients are integrated, wait a few minutes and let the milk cool down. This is so it can reach the ideal temperature for the yogurt starter to ferment. Check the packaging of your yogurt starter to know how long this will take.

Next, dissolve the yogurt starter sachet in a cup of vegan milk and add it to the coconut milk. Stir with a non-metallic kitchen utensil and let it rest for the yogurt to ferment. The preparation must rest in the fermenter or yogurt maker at 38-40 ºC/100-104 ºF for 10 hours.

When the yogurt with coconut milk has finished fermenting, store it in the fridge for an additional 8 to 12 hours to achieve acidity and consistency. After this time, remove the yogurt from the fridge and stir until it is creamy. Stir it less if you prefer a more curdled consistency.
