The first step in this cast iron skillet pizza recipe is to prepare the dough. Sift the flour into a mixing bowl. Make a crater in the middle and put into it the salt, ground dried oregano and olive oil. Slowly pour in the beer and stir as you do. Keep stirring until the dough comes together.

When the dough has combined as well as possible in the bowl, you will need to take it out and knead with your hands. Do this until the dough is silky smooth and no longer sticks to the side of the bowl. Cover and leave to proof for 30 minutes.

Take an iron skillet and rub the surface with a little olive oil. Put onto the stove on a medium heat until the pan is hot (about 3 minutes). Take the dough and roll it out on a clean floured surface. Tear the dough in half and roll circular pizza shapes as bug as the bottom of the skillet. This recipe should be enough for 2 pizzas depending on the size of your skillet.

When the pan is hot, lay over the pizza dough and cover with a lid (if your skillet has no lid, use a larger frying pan on top). Turn to a low heat and cook for about 5 - 8 minutes until the dough rises slightly and the bottom is golden brown.

The secret to getting the sauce right in this cast iron skillet pizza recipe is to heat the tomato sauce first. We are using a pre-prepared tomato sauce, but you can make your own if you wish. Heat in the microwave for about 1 minute until the sauce is properly hot.

Turn the dough in the skillet over so that the more golden side is now exposed. Take a spoon and spread out half of the sauce over the pizza base. Reserve the rest for the second pizza. Spread over half the cheese and top with the toppings.

Our two pizzas are like this: one with pepperoni and cherry tomato slices, the other with sliced red onion, anchovies and black olives.

Cook the pizza in the skillet by covering with the lid and cooking for a further 6 - 8 minutes. This is so that the other side of the dough can also cook properly and the cheese can melt. You will need to remove the lid and dry with some kitchen paper to stop moisture dripping onto the pizza and making it soggy.
