How to Cook Tortang Talong with Egg
Philippines have an abundance of eggplants, and they are integral parts of Filipino cuisine. When it comes to making an omelet for breakfast or lunch, they use an eggplant in that too. Basically, tortang talong is an omelet made with eggplant. As it is an omelet, it uses egg to bind the eggplant together. Although this dish is very simple to make, it needs some time in the kitchen. You have to grill the eggplant first, then fry it with an egg like an omelet. All the time and effort you spend is worth the taste that’s so good. The first step to cook tortang talong is to heat and cook the eggplant. You can place the raw eggplant directly on fire on the stovetop. Let the skin of one side become blistered and charred, and then flip over. Do the same with all sides, until the entire eggplant becomes brown black in color. The darker the color, the easier it will become to remove the skin. Another way to cook the eggplant is to wrap it in aluminum foil and place over direct fire of the stovetop. You have to keep cooking until the entire eggplant gets burnt and smoky. One more way is to place a raw eggplant in a pan and let it cook over high heat. Let the entire eggplant get burnt and then remove from heat.
Now it’s time to peel off the eggplant’s skin. Once you remove the eggplant from the heat or fire, let it cool down first. Then remove its skin using your fingers or a knife. Make sure that you remove only the skin while keeping the stem and crown intact. Try to remove as much skin as possible, after which you will be left with only the flesh of the eggplant. Keep it aside for a while.
In the mean time, crack your eggs in a shallow bowl and beat properly. Add salt and pepper in the eggs and then beat again to mix well. If you are making the pork version of tortang talong, you can stir fry some onion, garlic and ground pork, add salt and pepper to taste, and add this mixture to the mixture of eggs.
Hold the flesh of one eggplant by its crown, and dip it in the egg mixture. Gently press the eggplant flesh using a fork. You should not press it hard, as the flesh may get broken up and get detached from the stalk. The tortang talong will look good only if it is in nice shape like the stalk of an eggplant. It will break and loose its shape if you press it so hard
While the eggplant is soaking in the mixture of eggs, heat a pan on stove and pour cooking oil in it. Oil should be just enough to cover the entire bottom of the pan. Once the oil heats up, hold the eggplant again with its crown and gently slide into the pan. Scoop some of the egg mix on top of the eggplant flesh. Let it cook from the bottom side, it may take 1-2 minutes, and then flip over.
Cook tortang talong well on both sides until it becomes golden brown in color all over.

Serve your tortang talong hot with soy sauce and rice, and enjoy. You can also sandwich it between two breads for an amazing taste.
