The first step you need to take if you want to know how make your kimchi pancake crispy is to make the batter, sieve the flour, add water and salt, and mix well. Add kimchi, chilies, kimchi liquid and the beaten egg into the mixture, and whisk well. Add ice cubes so that batter remains cold. This is a perfect trick to make the pancakes crispy. If you don't like it too crisp, you can replace the ice cubes with cold water.
Next, you'll have to pre-heat a frying pan for 10-20 seconds, then add cooking oil in the pan once it is hot.
Scoop out a ladle full of the kimchi pancake mixture, and pour it out in the pan. Spread it evenly to make it uniform on all sides.
