As you can see, there are lots of ingredients, but all of them are incredibly healthy. The bananas were included not only because we love banana muffins, but also because they are a good alternative to using lots of fats in the form of batter or oil. Almond and pumpkin seeds are some of the best foods you can eat, coconut oil is a healthy fat, and honey serves to sweeten this muffin recipe with no sugar.

Place you almond and pumpkin seeds on a tray covered with a piece of parchment paper, then in the oven at 350 degrees F. This way, the seeds will dry a bit and it will be easier to transform them into a flour for our no flour muffins. Roast for 5-8 minutes, stirring once. Then let them cool down and blend them into a flour with the help of a blender.

Be careful not to blend them too much, they shouldn´t become oily: once you reach the texture of almond flour you are done. Why not buy almond flour? Because it is cheaper to home make it!

Add baking powder, cinnamon, ginger and salt to your (no flour) flour.

Now, the wet ingredients. Beat the eggs until the become foamy. Smash the 2 ripe bananas and mix them with your coconut oil and honey. This is a super sweet mixture with no sugar, can you believe it? You can use it to sweeten other no sugar recipes as well.

Gently mix all of the ingredient of your no flour no sugar muffins and fill the muffin molds with the mixture. They will grow quite a lot, so don´t fill up the molds too much.

Bake for 20 minutes at 350 degrees F. Let them rest for about half an hour before eating your delicious no flour no sugar banana muffins. Let us know how they were!
