Broccoli stir fry

The first option to cook broccoli Indian style is to make a delicious stir fry with the best spices to accompany a delicious homemade naan bread or paratha.

Ingredients

  • 2 cups of broccoli florets
  • 1 cup potatoes
  • 1 small onion chopped finely
  • 1 medium tomato chopped finely
  • 2 tsp ginger garlic paste
  • ½ tsp cumin
  • Salt
  • Chili powder
  • Turmeric
  • Garam masala
  • Oil
  • Few peanuts (roasted and crushed)

Recipe

  1. Heat 3-4 cups of water in a pot
  2. Add broccoli florets and salt in it
  3. Let it boil for 5 minutes
  4. Drain off the water and set them aside
  5. Heat oil in a pan
  6. Add cumin seeds to the oil and let them splutter
  7. Add ginger garlic paste and fry until you can feel the aroma
  8. Add onion and fry until translucent
  9. Add turmeric and tomatoes, fry until they become mushy
  10. Now add chili powder and garam masala
  11. Add potato and fry until they are half cooked
  12. Add broccoli and cook on low heat. Cover the lid if needed
  13. Sprinkle peanuts now and stir fry for 2 minutes. If you want the peanuts to be crunchy and crisp, add them at the time of serving
  14. Serve this broccoli fry with chapattis or rice

Steamed broccoli

Next, we're going to make an easy recipe that doesn't require as many ingredients to cook it Indian style. You can eat it as a starter or a quick snack.

Ingredients

  • 1 crown of broccoli
  • Salt as needed
  • Cheese, mayonnaise or butter
  • Flavorings like onion powder, garlic powder, vinegar, soy sauce or red pepper flakes
  • Sliced almonds or toasted sesame seeds

Recipe:

  2. Cut the crown into florets
  3. Peel the thick outer skin of the steams, and cut them lengthwise
  4. Fill one inch water in a pot
  5. Let it boil
  6. Put broccoli in a steamer basket and keep inside the pot
  7. Cover the lid and let it steam for 5 minutes
  8. Drain the excess water
  9. Season with pepper and salt
  10. Add cheese, mayonnaise or butter if you want
  11. Add onion powder, garlic powder, vinegar, soy sauce or red pepper flakes for flavoring
  12. Sliced almonds or toasted sesame seeds also taste great when added to steamed broccoli

Broccoli pulao

Ingredients

  • 1 crown broccoli
  • 2 cups rice
  • 2 tbsp oil
  • 2 tbsp ghee
  • 1 bay leaf
  • 3 cups water
  • ½ coconut milk or yogurt
  • 1 tsp lemon juice
  • Salt to taste
  • 1 tsp fennel seeds
  • 5-6 pepper corns
  • 1 clove
  • 1" piece cinnamon
  • 1" ginger
  • 5 cloves of garlic
  • Handful of mint leaves
  • Handful of cilantro
  • 4 green chilies
  • ¼ tsp turmeric powder

Recipe

  1. Wash and soak rice
  2. Cut broccoli into small florets
  3. Peel the stem’s skin and cut it into thin stripes
  4. Wash and keep aside
  5. Grind fennel seeds, pepper corns, clove, cinnamon, ginger, garlic, mint leaves, cilantro, green chilies and turmeric powder to make a paste
  6. Heat ghee and oil in a pan with heavy bottom
  7. Add bay leaf to it
  8. Add ground paste to it and fry for one minute
  9. Drain the rice and add to this pan
  10. Fry for one more minute
  11. Add water, coconut milk, salt and lemon juice to it
  12. Let it boil
  13. Reduce the flame and let it cook for 15 minutes
  14. Add broccoli florets to the cooked rice and mix
  15. Cover the led and let it steam for 5 minutes
  16. Switch off the flame and keep covered for 5 more minutes. This time will be enough to keep cook the broccoli perfectly, so that it remains crunchy at the time of serving
  17. Tastes great with raita, chips, pickle, butter chicken, paneer butter masala, curd chicken, channa masala, malai kofta and other such spicy Indian dishes.
