Steps to follow:


To make chocolate ganache you will need:

  • whipped cream
  • dark cooking chocolate
  • butter
  • Liqueur if you wish to flavour it

We recommend that you start by breaking up the chocolate so that it is easier to melt. You can do this with your hands or with a sharp knife, being careful not to hurt yourself.

The first thing to do to begin preparing the chocolate ganache is to put the whipped cream in a pot and heat it up over a low flame until it is about to boil. It is very important that you remove it from the heat before it boils.

Then, add it gradually to the bowl containing the chocolate and stir it until the pieces of chocolate have melted. You can use this chocolate ganache as filling for your cakes as well as to cover your cakes prior to the adding the sugar icing.

When the chocolate and the cream are combined, add the butter to make the ganache shiny and give it a creamier texture. It is important that you add the butter at this point because doing so beforehand, when the mixture is still very warm, would ruin it and cause it to lose its texture. If you want a thicker chocolate ganache, add a little more chocolate. If, on the other hand, you want it to be more watery, heat up a little more cream.


Mix it all together with a whisk and your chocolate ganache is ready! If you wish, you can flavour it by adding a drop of your favourite liqueur or some orange peel, for example. If you are flavouring it with orange peel, or similar, you should do so when you are heating the cream and then drain it. You can also add vanilla essence.
